Greek Salad

Instead of slicing large tomatoes, you can use cherry tomatoes because they release less water into the salad than larger tomatoes would. 

Extra tip

Ingredients:

  • 2 large ripe tomatoes, cut into wedges
  • 1 large cucumber, sliced
  • 1 small red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Koukoutsi Organic Olive Oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a large salad bowl, combine the tomato wedges, sliced cucumber, red onion slices, and Kalamata olives.
  2. In a small bowl, whisk together the Koukoutsi Organic Olive Oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
  4. Sprinkle the crumbled feta cheese over the top of the salad.
  5. Serve immediately, or chill in the refrigerator for 30 minutes to allow the flavors to meld before serving.
