Greek Tzatziki

Ingredients:

  • 1 cucumber
  • 2 cups Greek yogurt
  • 2 cloves garlic, minced or you can also use Koukoutsi Garlic Paste
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice or 3 tablespoons of vinegar
  • 1 tablespoon chopped fresh dill (or mint)
  • Salt and pepper to taste

Instructions:

  1. Grate the cucumber using a box grater or food processor. Place the grated cucumber in a fine-mesh sieve or colander set over a bowl, and sprinkle with a pinch of salt. Let it sit for about 10-15 minutes to allow the excess moisture to drain.
  2. Meanwhile, in a mixing bowl, combine the Greek yogurt, minced garlic, extra virgin olive oil, lemon juice, and chopped fresh dill (or mint). Stir well to combine.
  3. After the cucumber has drained, use your hands to squeeze out any remaining liquid. Add the squeezed cucumber to the yogurt mixture and stir until well combined.
  4. Taste the Tzatziki and adjust the seasoning with salt and pepper as needed.
  5. Cover the Tzatziki and refrigerate for at least 1 hour to allow the flavors to meld.
  6. Before serving, give the Tzatziki a good stir and drizzle with a little extra olive oil, if desired. Serve chilled with pita bread, grilled meats, or as a dip for vegetables.
  7. Enjoy your homemade Tzatziki, bursting with fresh flavors and creamy goodness!

Feel free to adjust the recipe to your taste preferences by adding more garlic, vinegar, or herbs as desired. Tzatziki is best enjoyed fresh but will keep in the refrigerator for up to 3-4 days.
